Rice bran oil (RBO) is a premium edible oil extracted from the outer layer of rice during the polishing process. It is valued for its antioxidant properties and contains unique nutraceutical compounds such as oryzanol and tocotrienols, which are associated with cholesterol-lowering benefits. Crude rice bran oil primarily consists of glycerides, along with smaller quantities of phospholipids, glycolipids, free fatty acids, and waxes.
Rice bran contains approximately 20-22 Wt% oil depending on the rice variety and milling process. India, being the second largest producer of rice globally, has significant potential for rice bran oil production due to its extensive paddy cultivation and rice milling activities. Modern milling techniques, including parboiling, help deactivate lipolytic enzymes and maintain bran oil quality, while extraction plants located near rice mills further support efficient processing.
Rice bran oil is recognized as a healthy cooking oil due to its balanced fatty acid profile, high smoke point, and rich concentration of antioxidants, vitamins, tocopherols, tocotrienols, phytosterols, polyphenols, squalene, and gamma oryzanol. It is suitable for frying, sautéing, salad dressing, baking, and other cooking applications. The presence of natural antioxidants contributes to its improved shelf life and nutritional value, making it a preferred alternative to oils containing trans-fats.
